Twenty years in catering taught us this: the food is only half the story. Here's what really matters.

Booking wedding catering is stressful. We've seen it all — from 50-guest mehendi lunches to 1,200-guest sangeet nights. Here's the checklist we wish every host had:

1. Lock the headcount 7 days before, not the morning of. 2. Mix interactive live counters (chaat, pav bhaji, dosa) with traditional buffet for energy. 3. Always have one Jain section and one no-spice section. 4. Ratio: 60% mains, 25% chaat & live counters, 15% desserts. 5. Hydration matters — kulhad lassi, jal jeera and chaas are non-negotiable. 6. Plate-up speed: one server per 30 guests for buffet, one per 12 for plated. 7. Backup gas, backup tawa, backup biryani — always. 8. Confirm power points 48 hours prior for warmers. 9. Vegetable yields drop 20% in winter — order extra. 10. Mithai counter at the entrance increases guest happiness by 40%. Trust us. 11. Pre-plated kids' thalis save chaos. 12. Photographer's meal — never forget the photographer.
